For the Salad:
2 courgettes (zucchini), cut into thin batons

100g (3½ oz) French green beans, trimmed and cut into thirds

1 green bell pepper, deseeded and sliced

2 celery stalks, thinly sliced

1 bunch of fresh watercress

For the Yogurt Mint Dressing:
200ml (7 fl oz) plain natural yogurt

1 garlic clove, finely crushed

2 tablespoons fresh mint leaves, finely chopped

Freshly ground black pepper, to taste

Blanch the Vegetables:
In a large pot of boiling water, cook the courgettes and French beans for about 5 minutes, until just tender.
Drain and rinse immediately under cold running water to cool and stop cooking. Drain thoroughly and set aside to cool completely.

Mix the Salad:
In a large salad bowl, combine the cooled courgettes, green beans, bell pepper, celery, and fresh watercress.

Prepare the Dressing:
In a small bowl, whisk together the natural yogurt, garlic, and chopped mint. Season to taste with freshly ground black pepper.
