Ingredients:
1 tablespoon malt vinegar
1 tablespoon ready-made Hollandaise sauce
2 x 25g (1 oz) lean smoked bacon medallions
1 large beef tomato
1 English-style white muffin, split in half
2 fresh eggs
1½ tablespoons chopped fresh parsley (for garnish)
Instructions:
Prep the oven and sauce:
Preheat your grill to medium. Heat a pan of water until it gently simmers, then add the malt vinegar. Warm two ovenproof plates in the oven at Gas Mark 1 / 140°C / 120°C fan.
Place the Hollandaise sauce in a small ramekin and set it in the oven to warm (or microwave for a few seconds if preferred).
Cook the bacon and tomato:
Grill the bacon medallions for 1 to 2 minutes on each side until golden and crispy. Slice the beef tomato into two thick rounds and grill until warmed through. Toast the muffin halves under the grill until golden.
Assemble the base:
Top each toasted muffin half with a grilled bacon medallion and a slice of tomato. Place them on the preheated plates to keep them warm.
Poach the eggs:
Crack each egg into a cup, then gently slide into the simmering water.Poach the eggs for about 4 minutes, or until the whites are fully set and the yolks remain soft (or cook them longer for your preferred doneness).
Finish and serve:
Carefully lift the poached eggs out with a slotted spoon and place one on each muffin stack. Spoon over the warm Hollandaise sauce, sprinkle with chopped parsley, and serve immediately.
